Luck of the Irish!

Every year, on this day, I make my most famous cupcakes: Chocolate Stout. If I had a signature cupcake, this would be it. I make them for St. Patrick's Day, for birthdays, for weddings, for whatever! It's a rich chocolate cupcake made with stout beer, in this case, Guinness Extra Stout. They're topped with a Bailey's Irish Cream frosting. The combo of flavors is phenomenal!

I make the same recipe every year, I've had it for longer than I can remember. But I'm interested to try different versions. Nigella Lawson has a chocolate Guinness recipe, and Robicelli's has a car bomb recipe that I've wanted to try ever since I got their cookbook a few months ago.




Every time I make them, I try to present them a little differently. Green cupcake wrappers, green frosting, or even green shamrock sprinkles! This year I went with green wrappers and gold sprinkles, just like the gold at the end of the rainbow guarded by a leprechaun. Maybe these cupcakes should be at the end of the rainbow instead!

Vanilla frosting taste test challenge

Yesterday was National Vanilla Cupcake Day. I have been wanting to try out a few different frostings lately, so this was the perfect opportunity.

I made 68 mini vanilla cupcakes and 3 different kinds of vanilla frosting.

First up was 7 minute frosting. I halved the recipe so I wouldn't end up with tons leftover. This frosting is made of egg whites and a cooked sugar syrup. It wasn't too hard, it just took a while to get the sugar syrup up to the right temperature.

The frosting is super fluffy and white, almost like marshmallow. I mounded it on top of the cupcakes and used some festive fall sprinkles.


Second was traditional American buttercream. This is the easiest to make, with only butter, powdered sugar, and vanilla.

I tinted it purple to distinguish from the other frostings. This is the frosting I use most often, as it is easy to make and use. It can be too sweet for some, since there's usually 4-5 cups of powdered sugar in it. I also added a tiny squeeze of lemon juice.


Last was swiss merengue buttercream. This is the trickiest to make, although it was a lot easier than in the past. This is made with a warmed egg white and sugar mix, which is beaten to stiff peaks, and then butter (4 sticks!) is added in gradually. I usually have trouble with this frosting, but it was perfect this time. After adding the butter, it looks all goopy and wrong, but you just beat it like crazy for a few minutes and it's perfectly fluffy and smooth.

I tinted this pink. It's much less sweet, but richer than other frosting. When Jason tasted it, he said it tasted fattier, and that's due to the pound of butter. This is also a recipe that I can easily adapt to be sugar-free.

Anyhoo, took these to be tasted this morning. The 7 minute frosting had flopped overnight, so I knew that wasn't going to get good reviews. I think most people like the american buttercream, which is good, since it's easier and cheaper to make than the swiss merengue buttercream. I'm glad to know that I can produce any of these frostings rather easily.

Martha Cupcake Challenge #16- Mocha cupcakes


In honor of National Chocolate Cupcake Day, I endeavored to make Martha's mocha cupcakes, since mocha = chocolate + coffee. I upped the amount of coffee in the cupcakes, using not only 3/4 cup of brewed espresso, but also a packet of Starbucks VIA Columbia roast instant coffee, and also A tablespoon of instant espresso powder. These don't have that much chocolate in them, only 2 tbsp, but it's enough to get that great mocha flavor.

Here they are fresh out of the oven, smelling soooo delicious! The recipe says it makes 24, but I only got 20. The batter was quite liquidy, and these cupcakes are moist and delicate. Chocolate has a tendency to be dryer than others, but these will not have that problem.

Now, on to the frosting. It's a 7 minute frosting, flavored with coffee. It calls for coffee extract, but I couldn't find that, so I just used the instant espresso powder to make a very strong 1/4 cup of coffee. I have made this frosting once before, for the coconut cupcakes (Cupcake Challenge #4). I ran into the same problems as last time. Although I did have a working candy thermometer, it seemed like the sugar mixture took a very long time to come up to temp. Also, I had to beat the frosting on high for 25-30 minutes, not on medium for 7 minutes, to get the glossy peaks I needed. I did some searching on the internet and found lots of other recipes that use a double boiler. I may try that next time, this is too time consuming.

This is how much frosting I had left over. Could have used another dozen cupcakes! And unfortunately, you can't save this for later, it must be used immediately, so it was either eat all that frosting myself or throw it out. (I threw it out)
So, cupcakes A+, frosting C. I am also going to submit this recipe on Starbucks.com, since they are having a contest to use the new VIA coffee. Since I don't drink coffee, this is how I use it.
